We start with the best product we can source. It is then prepared by our team of sushi Chefs with skill and attention, minimally adorned and served with pride. Offered as maki, sushi and sashimi and a variety of sushi appetizers and entrées, tuna is truly one of the pillars of our cuisine.

SALMON

We source an array of salmon from across the globe. Discover the range and versatility of this majestic fish. Menu highlights include a salmon tasting from our sushi bar and our sous vide salmon, one of our kitchen signature dishes. 

SPECIAL FISH and SHELLFISH

At KOMÉ, we constantly strive to provide an array of unique and different fish choices to our guests. We source worldwide to bring new and seasonal flavors and experiences.

BEEF

For our "everyday" beef we utilize top grade Certified Black Angus which we prefer for it's generous marbling. For our Wagyu we source A5 Grade from Mizakaya Prefecture. This is, in our opinion the best wagyu beef on the planet!

UNIQUE VEGETABLES

Often relegated to the "side of the plate", we treat our vegetables with the respect they merit. We work with local farmers and growers where possible to source seasonal and unique and interesting vegetables at their absolute peak.

ROOT WASABI

When available, we offer root wasabi to our guests. This perfect condiment has the effect of elevating sushi which is already great to the level of sublime.

HOME MADE SAUCES

 Drawing inspiration from both Japanese and French traditions and techniques we take great pride in the quality of our house-made sauces. Our sauces are never heavy or cloying as we rely on reductions and emulsions to provide a satisfying mouth-feel. 

RICE

Rice can be considered as one of the central building blocks of our cuisine. We use only the finest varietals available, this demand for only the best translated to the finished product.
